Kothimbir vadi is very famous Maharashtrian snack made from the fresh coriander leaves, besan(gram flour) and some spices.
It is usually served with a cup of tea and tomato ketchup as breakfast or evening snack.
In Marathi language, "kothimbir" or "kothmir" stands for coriander leaves and the coriander leaves and coriander leaves plays important role in this recipe as it is main ingredient of this recipe that why it preferred as "Kothmir vadi".
Like any other dish , every household has their own unique way of preparing Kothmir vadi but the result is always a delicious Kothmir wadi.
Ingredients
3 cups fresh finely chopped Coriander leaves
2 Cups gram flour or besan
2 tbsp rice flour
2 to 3 green chilies chopped
6 to 7 Garlic pods
1 inch ginger
1 tbsp Cumin powder
1 tbsp coriander powder
2 tsp sesame seeds
1/4th tsp Turmeric powder
1/4th tsp red chili powder
Salt to taste
Oil for frying
1 tsp baking soda (optional)
water as required
Method
Firstly , Make a paste of green chilies, garlic and ginger.
In a bowl , take coriander leaves add green paste, gram flour, rice flour, cumin powder, coriander powder, sesame seeds, turmeric powder , red chili powder, salt and baking soda and mix everything well.
Add water as needed and make dough. The dough should be thick which should be stiff but not too hard.
Now Grease the baking tray and spread the dough into it and flatten dough with hand.
Steam it in a steamer for about 15 minutes.
Once cooked, cool it down and cut into desired square pcs.
In a pan Heat oil and shallow fry the kothimir vadi.
Flip a couple of times more and fry till the sides are crisp and golden. If you want you can even deep fry them.
Kothmir vadi is ready, Serve hot with sauce and chai.
