Navratna Pulav

Navratna pulao is a delicious mild pulao made with nine different ingredients like diffrent vegetables, nuts and paneer.

We can make a pulao in many ways like Tava pulao, Spinach pulao, Fried Rice, Lemon Rice and Navratna pulao.

Navratan pulao prepared with dry fruits and fresh veggies is overly heavenly and lavish to eat.

Ingredients

  • 1 cup Basmati rice
  • 1 tsp Ginger Garlic Paste
  • 2 nos Green Chillies
  • 1/4 cup Peas
  • 1/2 cup Paneer
  • 1/4 cup Cauliflower Florets
  • 1 Potato
  • 1/4 cup Carrots
  • 1/4 cup Beans
  • 3 to 4 tbsp Ghee
  • 5 to 6 Cashews
  • 5 to 6 Almonds
  • Handful Raisins
  • Salt to Taste
  • 1/2 tsp Cumin Seeds
  • 2 Cardamom
  • 1 inch Cinnamon stick
  • 4 to 5 Cloves
  • 1 tsp Peppercorns
  • 1 tsp Lemon juice
  • Handful Coriander Leaves
  • Few Strands Saffron
  • 2 tbsp Milk warm
  • Method

  • Firstly, wash and soak the rice for 15-20 minutes.Then boil the basmati rice along with 2 cups of water, 1 tsp of ghee and salt.
  • In a Kadhai/Wok/Pan ,Heat a ghee.
  • Separately fry the nuts in a ghee. Remove and keep it aside in a plate.
  • Fry the paneer from both the sides till it turns nice golden. Transfer it into a plate.
  • Now Separately roast all the vegetables in a ghee for 2-3 minutes each and keep it aside in a plate.
  • Now In remaining ghee, add the whole spices and saute well.
  • further add the ginger garlic paste, chopped green chilies andsaute for 2-3 minutes.
  • Add the roasted vegetables and cooked rice. cover and simmer for 5 mins, then add the roasted paneer, nuts, finely chopped coriander leaves and saffron soaked in warm milk all over the top of rice.
  • Again Cover and cook the rice for 10 minutes on low flame.
  • Navratna pulav is ready. Enjoy it with raita.
