Methiche Alan (fenugreek curry laced with gram flour and curd) is an authentic maharastrain recipe mostly made in Vidharbha ( is the north-eastern region of the state of Maharashtra).
Mostly it is made in every marathi house during Winter season as in this season you can see methi (fenugreek) leaves everywhere that are consider super healthy.
The subtle bitterness of fenugreek is balanced with the sourness of yogurt, to create a dish that is healthy and delicious at same time.
Ingredients :
Methi/fenugreek leafs 2 bowl
Curd 1 bowl
Besan/Gram Flour 3 tbsp
Cumin Seeds 1 tbsp
Mustard Seeds 1 tbsp
Green Chillies 5 to 6
Garlic buds 5 to 6
Asafoetida pinch
Ghee 2tbsp
Dry red Chillies
Salt to taste
Oil
Method -
Firstly, Crush garlic and green chillies together
Take curd in bowl. Add besan and mix well.Make a smooth batter.
Heat oil in Pan, add curshed garlic and green chilli paste. Saute for a min.
Afterthat, add cumin seeds, mustard seeds, asafoetida, turmuric powder and fry for 2-3 mins
Now, add Finely chopped methi and saute for a min. add salt to taste, cover it and let it cook.
After 5mins methi get cooked, once its done low the flame and pour curd & besan mixture, Give a nice stir and cook for another 2 mins.
In a kadhai/pan, heat ghee for tempering.
Add Cumin seeds, mustard seeds, Dry red chillies and let it splutter.
Pour this tadka on methi aalan.
Methi Aalan is ready, Serve it with poli or rice
