Shankarpali

Shankarpali is diamond shaped sweet snack which is usually made during festive occasions like Diwali in Maharashtra.

These slightly flaky, melt in the mouth crisp fried flour cookies are a good tea time snack and popular in Western India, specially in Maharashtra, Gujarat and Karnataka.

Shankarpali can be sweet, sour or spicy depending upon how you make it. The main ingredients are all purpose flour (or maida), sugar and ghee. For some people, this snack is very versatile and comes in a savory version too. The savory version of shankarpali replaces sugar with red chili powder and carom seeds (ajwain). However, all versions are rich in carbohydrates, making it an instant source of energy.

Kids love to eat this tasty snack. So, try to make this yummy tea-time snack and enjoy with your loved ones.

Ingredients :

  • 1 1/2 Cup Maida/Refined flour
  • 1/4 cup milk
  • 1/4 cup ghee
  • 1/4 cup sugar
  • Salt to taste
  • Method :

  • Cook the ghee, milk and sugar to a pan on low heat, stirring, until the sugar is dissolved. Set aside to cool.
  • In a bowl, mix the maida and salt. Add the cooled mixture to make a soft dough.Let the dough rest for 20 minutes (Remember that the dough will harden as the ghee solidifies).
  • After 20 minutes, knead the dough again. Divide the dough into equal portions and make a ball.
  • Roll each ball into an 8 to 10 inch circle and cut it into 1 inch squares or diamonds using a knife. Separate the cut shankarpali with a spatula and place them in a tray.
  • Heat the oil in a frying pan on medium heat. Once the oil is completely hot, keep the heat on medium high. Fry the shankarpali for 2 to 3 minutes on medium low heat till shankarpali turn nice golden brown from all the sides.
  • when done, take them out on a plate. Let them cool.
